- Title: Travels A La Carte Sicily
- Date: 10th May 1994
- Summary: Food writer and broadcaster SOPHIE GRIGSON and her husband WILLIAM BLACK travel the length of Europe to discover the traditional food and wines which have been produced on the continent for centuries. TRAVELS A LA CARTE highlights the richness and diversity of Europe's cuisine at a time when the spread of fast-food restaurants and convenience food in supermarkets means that food is losing its distinctive national character. Sophie and William travel to Spain, Sicily, Portugal, Switzerland, Hungary, France, Turkey and Norway to meet the farmers, fishermen and cooks who enjoy the local specialities which have been produced in their regions for generations. In Spain they visit a mountain village known for its pork and cured ham; the markets of Palermo offer a chance to use fresh local produce in traditional recipes. Portugal offers an opportunity to join a sardine fishing trip and cook the results, The traditional cheese-making of Switzerland contrasts with the paprika harvests and rich, meat dishes of Hungary. In France, William joins a pigeon hunt and Sophie discovers the truth about foie gras, while the chaotic bustle of Istanbul's street markets couldn't be further removed from the snow-covered islands off Norway's north-west coast where Sophie and William discover a thousand uses for a dead cod - none of which involve frying it in batter with chips! The FIRST programme looks at some of the traditional dishes of Sicily, where the fertile soil produces wonderful fresh fruit and vegetables and the traditional fishing industry means a wealth of simple dishes based on tuna, sardines and other fish.
