- Summary: For the third of their series about the traditional foods of Europe, Sophie Grigson and William Black visit the Portuguese port of Sesimbra. Almost a third of the town's population are still employed in the local fishing indusry - making it one of the few remaining towns in Portugal where fishing is still more important than tourism. The regional dishes reflect the importance of this centuries old industry, with a wealth of recipes featuring sardines, mullet and salt-cod. William makes his living as a 'fish-finder', buying fish for restaurants and hotels, so he takes a professional interest in joining an evening fishing trip on a family-owned sardine boat. Meanwhile Sophie joins Laura Reis and Marie-Jose Borges to cook a favourite local dish of scabbard fish with fresh, spring peas. One of the most important dishes in the local diet is bacalhau, salt-cod, which ahs ben a staple part of the Portuguese diet since sailors discovered the phenomenally, rich fishing waters around Newfoundland in the 16th century. Of the many hundreds of recipes on offer, Sophie cooks bacalhau a Gomes de Sa - salt cod with olives, eggs, onions, and peas.
